Decanters
Good mature red wines, if stored properly, benefit greatly from ageing. The aromas and flavors created in the vinification process take time to develop in the bottle, and then need to be gently revealed upon opening. Older wines should stand a few hours (while sealed), then carefully decanted just before serving to ensure that no sediment is included.
Young red wines are more accessible and plentiful than mature reds, but also tend to lack structure and development. They can be decanted several hours before serving to allow optimum expansion of bouquet and flavor as well as soften tannins.
White wines are usually consumed when they are much younger than reds, but they too can benefit from decanting. The aromas and flavors of a white wine are layered, often subtle and in many cases fleeting; gentle decanting encourages their development and aids in revealing the wine’s color.
